All in one Apple Cake - It's apple season and this cake is perfect for this time of year. Moist, light and tasty and just so easy to do.

Ingredients:
2 eggs
1 3/4 cups sugar
2 heaping teaspoons cinnamon
1/2 cup oil
6 medium Gala or Fuji or Honey Crisp apples
2 cups flour
2 teaspoons baking soda

Directions:
Preheat oven to 180°C, 350°F or Gas mark 4

In a large bowl, mix together eggs, sugar, cinnamon and oil.
Peel and slice the apples and add to the mixture in bowl. Make sure you mix and coat the apples well to prevent them from turning brown.
Then add to the bowl the baking soda and flour. Using a fork mix all the ingredients well together.
Pour the mixture into a greased one 9″ round pan.

Bake in the oven for approximately 55 minutes until golden brown in colour.

Serve with a lovely cup of tea  or with some custard as a wonderful autumn pudding.
