300g Spinach
250g Ricotta
2 eggs
150g Cheddar Cheese or Grated Parmigiano
Salt and Pepper
1. Prepare th spinach and boil lightly. When cool, chop finely.
2. Add the ricotta cheese, grated cheese, 2 eggs and seasoning.
3. Mix well together. If you prefer you can blend all the ingredients together in a blender.
4. Place in a dish and bake in the oven (pre-heated) for about 30 minutes at 180°C.
This is a dish you can prepare in advance and bake for 20 minutes and then pop back into the oven 10 minutes before serving so it is warm.
