Ingredients:

A 500g carton of Fromage Blanc or plain Natural Yoghurt
A handful of Fresh Mint and several stems of Chives
Thin Slices of Cucumber
Extra Virgin Olive Oil
Walnut Oil (optional)
Salt pepper
Milk to thin if needed

Method:

It could not be easier . Place the Fromage Blanc or Plain Yoghurt into a bowl. Finely chop herbs and chives. Add to bowl and mix in. For a cool fresh flavour, add thin slices of cucumber.
All according to taste, add a little of the olive oil plus a flavoured oil such as Walnut Oil.
Season with salt and pepper. If the consistency feels too thick, add a little milk.

Serve chilled or as soon as made. Garnish with mint leaves and a twist of cucumber.

Variations according to preference can be made. You could add fresh parsley, finely chopped onion or really, whatever. Just enjoy. Great with salads, on pitta bread or makes a great cool touch to a hot and spicy curry.
