Indian Vegetarian Gourmet - Stuffed Tomatoes
4 Large Ripe tomatoes - Not too ripe, firm to touch
1 chopped Onion
Handful of finely chopped Cauliflower
50g Roasted corn
50g Peas and/or beans
Chopped chilli (optional)
50g grated cheese
3 tablespoon breadcrumbs or a crumble a slice of fresh bread
Freshly chopped basil
Juice of 1 lemon or lime
Black Pepper and Salt
Method
Cut the top of the tomatoes Scoop out the pulp. (This can be used in soups or stews later) Mix together the rest of the ingredients. Spoon into the tomatoes Bake in the oven for 20 minutes 350°F or 180°C or Gas 4/5 Garnish with fresh basil leaves
