This is a great soup using left over cooked chicken.

Ingredients:

Left over cooked chicken
1 Onion
1 Chicken Stock Cube
Fresh Herbs - Parsley and Chives (You can use any)
Pepper, Salt (Optional)
2 Eggs
2 Tablespoons of Grated Parmesan Cheese

Make up some chicken stock using a stock cube.

Add to the stock some diced of finely sliced onions and simmer in the stock.

Add some chopped fresh herbs, such as parsley and chives.

Using the left over chicken, cut into very fine strips and add to the stock.

Season with pepper. It may not be necessary to add salt but taste and add accordingly.

Allow to simmer very gently.

Beat up two eggs and mix in two tablespoons of grated parmesan cheese.

Using a whisk, pour the egg mixture to the soup and mix well. The egg will form little strips or ribbons.

Serve the soup immediately and enjoy.

An extra addition would be to serve with hot garlic bread.
