Nothing could be easier in making this fig jam.

1. Take off the stalks from the fresh figs.

2. Weigh and then chop into pieces and put into a pan.

3. The caster sugar quantity should be half the quantity of the figs. Add to the figs.

4. Leave to settle overnight.

5. Bring the fruit and sugar to boil.

6. Remove the figs and leave the juice in the pan.

7. Continue to boil the juice and when it gets to the pearl stage, re-introduce the figs back into the pan.

8. Cook gently for a further 15 minutes. Keep stirring the mixture and then whilst still hot, pour into your jars.

9. It's the perfect jam to remind you of a brilliant summer!

Healthy:

Figs are a good source of fibre, calcium, potassium and manganese.

100 g or 3.5 ounces of raw figs contains 80 calories

Great ideas using fresh figs:

Figs can be used as a starter served with prosciutto and mozzarella cheese and drizzled with extra virgin olive oil.

Place sliced figs on top of chicken breasts with a drizzle of olive oil and bake in oven.

Use in cakes and biscuits.

Stuff figs with cream cheese and gorgonzola.
