It's A Very Berry Salad



1 pint of Blueberries

1 to 2 Cucmbers (depending on size and quantity wanted) thinly sliced and in half

1/4 lb Crumbled Feta Cheese

3 tablespoon Chopped Fresh Mint Leaves

1/2 Cup of White Balsamic Vinaigrette

Salt and Pepper


1. Mix together blueberries and cucumber and season with salt and pepper.

2. Add the white balsamic vinaigrette, feta cheese and mint. Gently mix together.

3. Serve in individual bowls and enjoy.

4. About 170 calories per serving.


You could add chopped walnuts and/or greek yoghurt. If you prefer, you can use blue cheese instead of feta.

Also great with fresh crusty walnut bread. More calories but... yummy!
