Savoury Muffins: Cheese, Pesto & Pine nuts
To make 8 muffins:
250 g of plain flour
50 g of pine nuts
15 g of dried yeast
½ teaspoon of bicarbonate of soda
Pinch of salt
60 ml of sunflower oil
50 ml of milk or fresh cream
80 g of pesto
Place in a bowl the eggs, milk and oil and beat together.
In another bowl, put the flour, salt, bicarbonate of soda, pine nuts, cheese, yeast and pesto and knead together.
When ready, add the egg mixture and mix together until all the ingredients are blended.
Put the mixture into lightly greased muffin cases - size 4 cm x 8 cm diameter.
Bake in a pre-heated oven 180°C, 350°F, Gas 4, for about 20 minutes.
