Mapel, Choc, Nut Cookies

Ingredients

125 g or 4½ oz plain Flour
70 g or 2½ oz softened Butter
1 Egg
50 g or 2 oz soft Brown Sugar of Demerara
50 g or 2 oz White Sugar
110 g or 4 oz Chocolate Chips or Chopped Chocolate Pieces
50 g or 2 oz Chopped Hazelnuts
½ teaspoon bicarbonate of Soda
2 tablespoons Maple Syrup

Method

Place in a bowl the sugar, butter, flour, bicarbonate of soda and maple syrup and mix well.

Then add the egg, chocolate chips or pieces and nuts and once again blend them together well.

Using a spoon, place blobs of the mixture on a greased baking tray, spaced well apart. There is no need to flatten as they will spread during baking.

Bake in the oven for about 12 minutes or until the cookies are golden in colour:
180°C / 350°F / Gas Mark 4.

Tip: Don't open the oven door for about 10 minutes, to prevent the cookies from going flat.

Remove from the oven and allow to rest a further 2 minutes before transferring the cookies onto a cooling rack. Allow another 15 minutes to cool before munching. Once you start, it will be hard to resist eating the lot!
